Chestnut Hill Senior Living Culinary Department to Honor Asian American Pacific Islander Month

May is Asian American Pacific Islander month, or AAPI for short, a time to celebrate the Asian and Pacific Islanders in the United States and their contributions to the history of this country. By recognizing the culture, history, and achievements of Asian American and Pacific Islanders, we can broaden the understanding of their countries and cultures, as well as enhance the appreciation for all that they have given to make this country great.

As is the case with many commemorative months, AAPI originated with Congress. In 1978, Congress passed, and President Jimmy Carter signed into law, a joint resolution declaring a week in May as “Asian/Pacific American Heritage Week.” This was later expanded to a month, and in 1992, May was designated as Asian/Pacific American Heritage Month.

At Chestnut Hill Senior Living Columbus, OH, we will be celebrating by honoring the territory of Guam, the state of Hawaii, and the countries of Korea and Samoa.

The dishes I’m making are red rice, BBQ short ribs, laity, cucumber salad, and mango green tea lemonade from Guam; chicken kebabs, Hawaiian salsa, Hawaiian roasted vegetables, and Hawaiian berry smoothie from Hawaii; beef bulgogi, Korean watermelon punch, and custard bread from Korea; and chicken and coconut rice, paifala (half-moon pie), and pineapple drink from Samoa.

I chose these dishes because I had never made anything from Guam before. I love Hawaii’s colors and flavors. It reminds me of summertime. Korean food reminds me of our cookouts that my taekwondo master has every year. I enjoy Samoa’s fresh fruit and coconut flavors.

As a culinary director, I feel we should celebrate Asian American Pacific Islander Heritage Month. It gives us a chance to step out of our comfort zone as chefs and to teach others about different cultures they have not had a chance to experience.
